Chia Pudding & Blueberry Oatmeal Muffins
Chia pudding is such a nice (and really easy) treat. The only trick is having enough time for it to set up. We like to make it the night before and often. Big batches probably work just fine, but we stick to 1-2 servings at a time unless we know we will be eating it up in a day or two or sharing with a group. The recipe used for this is the same posted earlier – it is tried and true every time.
The muffins are still a work in progress. The first recipe we made was yummy but super crumbly. The second version (pictured) just about perfect, but a bit more tweaking to do before we share the recipe. What I can tell you is they taste like a bowl of maple & brown sugar oatmeal with sweet blueberries. Out of the oven – oh my they are perfect. Look for the recipe to be up soon, we promise!
