Chickpea “Chicken” Pesto Pasta – dinner under 30 minutes!

Chickpea “Chicken” Pesto Pasta – dinner under 30 minutes!

Sometimes just when you think you have nothing to make for dinner, you find that with just a bit of creativity you can make something that is good enough that you want to share!  Tonight I  didn’t know what to make but had some cashews

Think you don’t have time for breakfast? Ten minute smoothies are the way to go!

Such an easy, tastey and protein-packed way to start the day off right! 1/2 c fresh blueberries 1 c baby kale 1/4 c frozen strawberries, blueberries and raspberries 1 tbsp PB powder 1 tbsp vegan protein powder 1 tbsp antioxidant blend 1 c unsweetened almond milk

Happy Mother’s Day!

I read a quote today, it is now one of my favorites!  “The moment a child is born, the mother is also born.  She never existed before.  The woman existed, but the mother never.  A mother is something absolutely new.”  Bhagwan Shree Rajneesh

I think this quote is particularly lovely to me because this past year both of my daughters became mothers.  Incredible mothers at that!  We celebrated Mother’s Day together and the day could not have been more perfect!

To all of you who are Mother’s, who are expecting, who are nurturers, who influence others with kindness and love, we wish you a very Happy Mother’s Day.

We are excited to share our meal with you, it was pretty darn great if we do say so ourselves and would be a great brunch for any occasion.  The best part of it is that not only was it yummy for today’s brunch, we now have lunch for the next couple of days.  We work hard to stretch a dollar, planning our menus carefully to ensure we can transform any leftovers into the next great meal.

Spring is here!

With the slow but sure change in season, it’s funny how cravings for new and fresh foods come into play.  With longer and warmer days, butterflies and birds in the air, it is hard not to see things through a new lens with renewed hope and excitement with the beauty that surrounds us.

Comfort food is often thought of as a “cold weather” food filled with warmth and gooey goodness.  Spring also offers a fresh new variety of comforting foods with fresh, crisp and delightful fruits and vegetables that are newly emerging.  Think; artichokes, asparagus, fiddlehead ferns, radishes, rhubarb, apricots, strawberries and that is just a few of the many great things to come!

With so many fresh options, we are excited to get started and to share our experiments, modifications and recipes with you.  We promise to share the good, the not-so-good and the whoops – don’t try this at home.
