Fifteen Minute Fiesta Salad!


1 Large Avocado diced

1 Can Black Beans

1/2 Bag of Spinach

1/2 Cup Diced Tomatoes (save for topping)

1/4 Cup Roughly Chopped Cilantro

2 Cups of Corn

1/4 Cup Green Onion

1 Bag of Beyond Meat Beyond Chicken Strips Grilled



Cook chicken strips on medium heat in frying pan until heated through

While chicken heats, thaw corn in microwave until room temp. or warmer if desired

Warm up black beans on stovetop

Once chicken is done, cut into small chunks  and add to mixing bowl

Chop cilantro, dice avocado, cut tomato and add to bowl

Add cooked corn

Squeeze 2 tbsp of lime and 2 tbsp of EVOO and toss!

Line a plate with fresh spinach, layer with black beans and fiesta salad, top with diced tomato (feel free to add salt and pepper to your liking) and voila!
